Mmmm…crunchy on the outside and dough like and flaky feeling on the inside.
You probably won’t believe this….but…..bread is disgusting to me. Seriously, after two years of being keto, bread just isn’t something I think about. Sometimes you need a little something sweet. Being in ketosis means you have to find unique ways to make something that tastes amazing and fits into the keto lifestyle.
So here it is: My husband’s original recipe that I tweaked to make it a little sweeter J
 
This cheesecake is so good it tastes like I am lying about it being low carb, sugar free, gluten free, and delicious. But, as my close friends and co-workers will tell you-IT IS NOT TOO GOOD TO BE TRUE!
 
Normally sugar free sugar is the worst because it upsets your stomach and can leave a bad bitter taste. Your stomach gets upset because the molecules in most sugar free sugars are too big and mess your digestion system up.

Once upon a time I was a Chinese-food-take-out kind of girl. Now that my carb eating days are over I have had to find unique and safe ways to get my Asian fix.  There are many tasty things at Chinese places but if you really think about what your favorite things are they probably involve noodles, sugary sauce, gluten, and rice. It’s not your fault it’s just the most common Chinese food for most Americans.

Keto in Cuba!

Holla mi amigo! I just got back from Cuba and man did I learn a lot! Keto in other countries can be pretty hard, especially if you don’t speak the language at all/very well. The typical Cuban diet consists of rice, beans, plantains, and sugar. Sounds scary, right? Through trial and error my husband and I learned to navigate the vintage car filled streets and eat our way to…safety?
 
Most restaurants in Havana are called a paladars. They are houses that have been turned into private restaurants owned by a family vs. owned by the government.  No matter where you go every meal is served with rice and beans. At first we asked them not to serve them-I hate to waste but quickly stopped doing that as it seemed to be rude. We really didn’t want to offend anyone and just wanted to enjoy the culture so we left our mounds of rice and beans untouched.

Pizza Pizza Pizza. Pizza of my eye. Oh, how we love you because of all the things but more specifically the flavor combination you provide.
 
My husband calls me a food stacker. It’s true though. I find that if I can have a small bite of all the flavors in one I can really create amazing combinations and of course that involves Pizza. I mean, how could it not?
 
I think its time to take a leap and talk about what goes on our pizza vs what the crust is made of. After all, toppings can make or break a pizza.

It’s time to  meet your new best friend: Meatzah!
 
No, you didn’t read that incorrectly, I said Meatzah. The base of this pizza is made entirely out of meat. You can’t pick it up and eat it like you can with fat head pizza and it doesn’t crunch BUT it tastes OUTSTANDING.

I went, I saw, I ate, now I want to cry!

There it was, my belly, protruding and extended as if I were pregnant with twins. To be clear I’m not preggers (sorry Dad) I’m just full of a non-keto binge-food-baby.  I sat in the tub pondering what had I done to get to this point and how can I stop it from happening again? 
 
My internal monologue went as follows, ‘You deserve a cheat now and again. In 2016 you lost over 100 pounds. You should be proud of yourself.’ As my belly stuck out of the water like an iceberg I noticed something mortifying, my stretch marks weren’t as noticeable as they were 5 days ago. I am either so bloated that my skin is stretching back out or I have gained more weight than I realize. What the heck am I thinking? No, no I didn’t ‘deserve’ a piece of chocolate cheesecake or ‘deserve’ to eat those crackers or that piece of ice-cream cake for my birthday or those Mexican chips and salsa or the trail mix or the…all the things. Why is it in our society we celebrate with food that punishes our bodies? My body was doing so well and it didn’t deserve the onslaught of sugar and gluten but somehow I had convinced myself it had.
