Chinese Food!!!

Fried Rice Keto Style  

Once upon a time I was a Chinese-food-take-out kind of girl. Now that my carb eating days are over I have had to find unique and safe ways to get my Asian fix.  There are many tasty things at Chinese places but if you really think about what your favorite things are they probably involve noodles, sugary sauce, gluten, and rice. It’s not your fault it’s just the most common Chinese food for most Americans.
 
Weight loss while eating Chinese food? Yes please! It’s time to take that carby classic and convert it keto style! FRIED RICE…omnomnom
 
Instead of rice we will be using cauliflower rice. I prefer the flash frozen organic stuff from Trader Joe’s but you can get cauliflower rice anywhere these days. You can make it yourself by putting raw cauliflower into a food processer.
 
Servings: 4
 
Ingredients
 
12 oz of Organic riced cauliflower
3 large eggs
.5 cup Soy Sauce (you can do more or less to taste) ((Use Coconut Amino for gluten free))
1 tbsp Garlic
¼ cup Sesame Oil
Fresh Pepper
4 oz Shrimp
6 oz Chicken thighs
2 oz mushrooms
2 celery stalks
1 cup Broccoli
Sesame seeds
 
1) Use a bit of that sesame oil in your pan with the garlic and get it hot. Once hot put in the cauliflower rice (still frozen but broken apart)
 
2) While that is going on I dice all my veggies up. Stirring the cauliflower rice occasionally. I like to get it browned in the oil and then stick it in a large bowl.
 
3) Re-oil your pain and throw those veggies in there. Add some soy sauce. While that is cooking dice up your shrimp and chicken. When I think that’s cooked pretty well I add that to the large bowl of fried rice.
 
4) Add some more oil and throw in the shrimp and chicken you cut up. This recipe is really versatile and you can use any meat combinations you want. Add some soy sauce and maybe garlic cracked pepper and salt.
 
5) Once that is done I add that to the big bowl and then put a bit more oil in the pan. Crack your three eggs into the pan once the oil is hot. Use your metal spatula or spoon to scramble the egg. Once cooked put all the egg scramble into the bowl.
 
6) Time to stir everything in the bowl until its mixed well.
 
7) Take the rest of your oil and put it in the pan. Dump all ingredients from the bowl into the hot oil and stir. Add soy sauce and salt/pepper to taste.
 
8) Time to plate it and sprinkle sesame seeds.
 
EAT it up but let it cool. It’s hard, I know. I have burned my mouth many times being impatient but trust me, it is totes worth the wait!
 
 
 
(You can lower the carb amount per serving by changing the veggies. Instead of celery try zucchini. Switch up the broccoli for something else-there are a few ways to play around with it!)
