Crunchy, Goey, & Tasty: Zucchini Bread

Mmmm…crunchy on the outside and dough like and flaky feeling on the inside.
You probably won’t believe this….but…..bread is disgusting to me. Seriously, after two years of being keto, bread just isn’t something I think about. Once in a while though it is nice to have a bread substitute for on the go food, fork free lunches, and I love to experiment. This next experimentation went really well. I mean, I basically I feel as if I hit the keto jackpot!
 
I have been playing around with keto zucchini bread for a few weeks when lo and behold I created this fantastic masterpiece.
 
It is crunchy on the outside, dough like and tasty on the inside and like everything else on this blog it is sugar free, gluten free, low carb, and delicious.
 
But you don’t have to take my word for it-you can try it out and see for yourself:
 
 
Ingredients
 
6.6 ounces Zucchini (this is about half a large zucchini but you can do more or less)
3.2 ounces Sour Cream
1 tbs Baking Soda
1 tbs Hemp Seed
Pinch of Salt
3.7 ounces Shredded Mozzarella
Pinch of Everything But the Bagel Seasoning (from trader joes)
6 ounces  Blanched almond flour
2 Large Eggs
 
 
Set oven to 350.
 
Throw all of those ingredients in a mixing bowl-of mix by hand if you want to burn a few more calories.
 
Once the batter is all mixed I cover a bread pan with parchment paper and pour my mixture in.  My bread pan is from ikea! I use a spatula to make sure the mixture is level  and pop into the oven once it hits 350.
 
Bake until the outside is crispy and browned.
Take out of the oven and cut into 8 pieces.
